Shun Individual Knives

As you use your knife, the razor-sharp edge naturally bends over just a tiny bit as the edge contacts the cutting board. Eventually, this means the sharp edge is no longer making direct contact with the food. The knife feels dull. The Shun combination honing steel is the solution. It gently realigns the edge of your blade, bringing the “sharp” back. It offers two honing surfaces: a smooth one for weekly honing and a micro-ribbed one for monthly honing—depending on your usage, of course. A built-in angle guide makes it easy to hone your Shuns with ease and precision. The steel-gray handle looks beautiful with the rest of your knives.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

I have a lot of high- end knives and was debating on pulling the trigger on a Yani since I'm not a sushi chef or a pro but I've been mesmerized by this knife for a couple years. I'm so happy I got it, it's a work of art! I've used it to fillet a few fish I've caught and for slicing roasts and steaks, haven't noticed it " steering" me due to single bevel, it's so sharp and has perfect weight. Not a laser like a Yu so I've got more confidence if I'm cutting a rib roast or something with a bone-in. Beautiful work of functional art. Haven't had to sharpen yet but will definately do it myself, I'm confident in my ability to sharpen and not scratch it. It is one fine tool. BTW, it's not my most expensive knife. This is the perfect knife for chopping.. Kira. Nampa, ID. Sat Aug 15 2026

Do you bake or buy whole loaves of bread? Then this will be one of the most-used knives in your kitchen. The Shun Kanso 9" Bread Knife cuts through bread quickly and easily, whether it's crusty or tender, and with less crumbing. The secret is our wide serrations. Kanso's wide, undulating serrations gently glide through bread so there's less tearing. Cakes and pastries benefit from the Shun Kanso 9" Bread Knife's smooth-cutting capabilities, too.

Beautiful knife. Makes my bread slicing so nice. Homemade sourdough can be a crusty challenge slicing but this knife Kanso 9" Bread Knife was the best purchase for it's purpose.. Anonymous. Fri Apr 17 2026

You will be amazed at the many uses of our multi-purpose shears. Of course, they cut things. In the kitchen, use them to snip herbs, trim asparagus, cut up tortillas, trim beans, open food packages, cut cheesecloth or waxed paper, trim flowers-you get the idea. In other areas of the house, they're handy for cutting the cord, twine, or rope, opening packages or envelopes, and lots more. But Shun Multi-purpose Shears really are multi-purpose tools. There's a built-in nutcracker, a jar opener, a bone notch (also very handy when trimming flower stems), a lid lifter, and even two screwdriver tips, one in each handle. They're great for tightening a loose screw in the kitchen cabinet without having to go to the garage to find a screwdriver. Shun Multi-purpose Shears have one blade serrated so they can easily cut through even tough or fibrous materials. A non-slip plastic over-mold on the handles makes them comfortable to use as well. And what could make these already handy tools even handier? The blades separate for easy cleaning, then lock together easily and securely for use.

So durable. Jeffrey. Andover, MA. Wed Jun 06 2018

The Shun Shiranami knife series is precision forged, nature inspired, rooted in the ocean's dynamic beauty. Shun Shiranami knives combine extraordinary sharpness with superior performance. The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Beyond durability, the textured surface of the jute micarta handle provides a tactile experience that improves grip and control, especially in wet or slippery conditions. The full composite tang in the handle lends the knife a robust stability and provides an optimum counterweight to the blade. Shiranami, meaning ""white-capped wave"" in Japanese, reflects the knife's stunning blade pattern, featuring an exceptionally sharp blade edge and a fine, thin mid-blade for ease of slicing, this series sets a new standard in cutting performance and beauty. All Shun Shiranami knives are made in Seki, Japan.

Best knife I ever owned! Wished I had this years ago. I’ve learned to take very good care of it, never put it in the dishwasher and store it in it’s own special spot (away from the other knifes). It’s razor sharp - watch your fingers. Let all your family members know to handle with care! It’s thin and can be easily bent. My husband bent the tip cutting through frozen meat (big-no no). I plan to take it in to a professional. I’ve only had to sharpen it once and I bought it a year and a half ago. In the photo, bottom left is the Shun Classic Chef’s Knife. Was trying to show the thinness.. Glynn. Oklahoma City, OK. Sun Jan 05 2020

[This review was collected as part of a promotion.] Wow this knife is still super sharp! I have never had a knife stay sharp like this. Wish it came with a guard or blade protector but rather amazing. Feels great in the hand and easy to use. I selected a paring knife since I do a lot of prep and cutting meats. You really don't have an idea how great these knives are until you're using one. If you cook a lot I heavily recommend u save for one and treat yourself but hide it from those who destroy kitchen items. Every family has one of those. Really impressive knife!! I am going to see if I can save for a chef knife or something else. Absolutely amazing!. Janep. Sat May 02 2026
