Miyabi 5000 FCD Gyutoh, 16cm blade. The gyutoh is the chef’s knife of the Japanese kitchen, used as a general-purpose knife for preparing larger cuts of meat and vegetables. The blade core is made of hard fine carbide steel for very good initial sharpness and cutting-edge retention. 48 layers of steel surround the core and make up the Damascus design of the blade. A three-stage grinding, sharpening, and polishing process called Honbazuke honing give the knife a razor-sharp cutting edge. There is no finger guard so the whole length of the cutting edge can be used. The edge is symmetrical (not a single bevel) so can be used by those both left and right-handed. The smooth join between handle and bolster helps to prevent calluses from forming on the thumb and forefinger. For best care, wash by hand, and maintain and sharpen using whetstones. Avoid using glass, ceramic, or stone cutting boards as these will dull the cutting edge.

Very versatile knife with an amazing edge. It’s extremely durable, has a nice weight in my hand, and makes cooking in the kitchen something I look forward to doing more because of this knife alone.. Zsa1. Thu Sep 24 2026

[This review was collected as part of a promotion.] I’m completely in love with this cleaver. While it’s a clever, I love the precision and the sharpness allowing me to use it for various other tasks making it feel like a chef’s knife! I love reaching for it for tasks lately because of i the way it just glides through prep and honestly it’s so satisfying! I particularly enjoy the weight of the knife giving much control over the prep. I love the finish with the hammered textured blade being absolutely stunning and keeping food from sticking to the blade. It’s got an impressive edge making quick work of the smallest details. It’s definitely a tool with a main camera aura, in my kitchen and I’m genuinely obsessed with it!. Heathers. Sat Feb 14 2026

Professional "S" are the classic knives for the professional kitchen. The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with Zwilling's signature ice-hardening technique, these four blades are harder and sharper, they will not stain or chip and they retain their sharpness longer. Honed and hand-finished by the most skilled artisans, the knives' laser-controlled edge is incredibly sharp. The sturdy bolster provides the right balance and acts as a finger guard. Precision-forged from a single piece of solid steel, these three rivet handle knives deliver optimum balance and safe handling. Professional chefs worldwide trust the tradition and quality of these impressive knives.

Offering precision and a lot of power in the hand: the WÜSTHOF 8" Chinese Chef's Knife will allow you to chop a cabbage or cut wafer-thin slices from a tomato in seconds, while the wide blade is also ideal for scooping up prepped ingredients and transferring them to the pot. The fine cutting edge ensures exceptional sharpness but should not be used on bones or very hard fruits (such as coconuts); instead, we recommend a Cleaver or Butchers Knife.

Nice heft to the knife and feels like a dream. We cook all our meals from scratch and host dinners often. So the knives in our kitchen have to deliver and this one has been a brilliant addition to the team. It is one of our favorites!. Roopa B.. Fri Jul 03 2026
