This will be my new go to pan. It is solid, sturdy yet ergonomic with the handles. The depth is great for sautéing. The true red color will make this a fun pan to use for serving spicy appetizers. It holds heat extremely well. The dual pour sections make it easy to drain off any extra, unwanted fluid. The box was shipped, wrapped in bubble wrap. That was a good precaution. The box still came with some corner damage but the pan itself was fine. The package was heavy so it makes sense it might take a bit of a beating during shipping. Read the instructions! This is not like my traditional, old cast iron pans. It seems this does not season to a non-stick interior finish. The instructions suggest a bit of fat when heating to properly heat and cook foods. I set the heat much lower than normal on my glass-top range (between low and medium) and after about 5 minutes of preheating the griddle was ready to go. The griddle cooks beautifully. My first test was pancakes: I wiped the hot griddle with oil on a paper towel and had no problems flipping even after a couple of batches. For cleaning, while the griddle was still warm (not hot), I pushed a paper towel around the griddle with the spatula to pick up excess oil and residue then went over the surface again with a wet non-scratch Scotch-Brite pad with a drop a soap and rinsed. The instructions advise you can use a metal cleaner to restore the original luster. I've used this griddle 3 times and really like it.
