I did a ridiculous amount of research before buying these GreenPan GP5 pans, and I’m happy to say they were worth it. Eggs slide around like they’re on ice, food cooks evenly on my gas stove, and cleanup takes about 10 seconds. The real test? Someone in my house used a fork instead of a spatula and the pan survived without a meltdown. This pan is similar in weight, and hence, heat retention for searing. But what sets the Bobby Flay by GreenPan series apart is the handles. The handles of the other brand are level and parallel to the top of the pan, as well as only being 5 inches long. The Bobby Flay cast iron skillets have handles that are slightly over 6 inches and are angled somewhat upward, which makes this pan so much easier to pick up. Also, the helper handles have enough space to actually get your fingers between the inside of the helper handle and the exterior of the pan without burning yourself. I have many types of pans as I am a very accomplished home cook. I appreciate good quality as well. I own All-Clad, Calphalon, Le Creusets and Staub etc. . I wanted a non stick skillet and read about the "GreenPan" . This model Valencia is a higher quality and price point but I like the durability of it. I was hoping to purchase the same model in a slightly larger size , but I can't seem to find it , so maybe Green Pan doesn't make it.. The pan is sturdy and the non-stick surface looks like it will last a while. I have used it to saute, fry and cook rice. I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I really like these pans - I had one years ago, and when I saw this set, I had to buy them. They are exceptionally non-stick, and no fat is needed, but I sometimes add a pat butter for taste. Sadly they arrived damaged. I believe this is more a reflection of the absurdly abusive delivery company, than the product itself. They are so rough with packages that I have yet to receive a box that isnt damaged - this time they were so rough that the pans came out of their internal protective packaging and were scraping against each other during the undoubtedly rough delivery to my house.
