The Zwilling Four Star 10" Chef's knife was the very first 'professional' quality knife I ever purchased. That was1978 and it was a revolutionary design at the time, its handle of black polymer a seamless extension of the blade, perfectly balanced and razor sharp out of the box. Some 22 Four Star knives of various shapes, tasks and sizes later I thought it couldn't get better, until now. The koribe wood handle on the 8" Chef's knife is aesthetically perfect and even enhances the functionality of the blade. For example, it warms to the touch immediately, becoming an extension of your hand, wrist, elbow and shoulder. When you're dicing 40 carrots or mincing a dozen cloves of garlic that fluidity alters the nature of the task from labor to meditative beauty. Thank you Zwilling engineers and please, please, please keep expending this line it is absolutely BRILLIANT. Crispyduck. Mon Jul 13 2026

Zwilling Pro is the most user-friendly knife available on the market. The unique blade shape and ergonomic bolster are the results of 280 years of experience in knife making and the rigorous study of how knives are used. A unique curved bolster supports the professional pinch grip, with the thumb and index finger on the blade, for safe cutting and less fatigue. The blade was redesigned with a broader curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the Asian chopping motion. The full length of the blade can be used when cutting and can be sharpened from bolster to tip. It was designed in Italy by Matteo Thun and made in Germany by Zwilling J.A. Henckels, the company that sets the standard for exceptional cutlery worldwide. With Zwilling Pro, we introduced an optimized chef's knife blade shape. Through years of experience in professional kitchens, some chefs have grown accustomed to and therefore prefer the traditional blade shape of the chef's knife. To enable these chefs to benefit from the new curved bolster, we have combined the innovative bolster shape with the classic blade shape.

Miyabi 5000 FCD Gyutoh, 16cm blade. The gyutoh is the chef’s knife of the Japanese kitchen, used as a general-purpose knife for preparing larger cuts of meat and vegetables. The blade core is made of hard fine carbide steel for very good initial sharpness and cutting-edge retention. 48 layers of steel surround the core and make up the Damascus design of the blade. A three-stage grinding, sharpening, and polishing process called Honbazuke honing give the knife a razor-sharp cutting edge. There is no finger guard so the whole length of the cutting edge can be used. The edge is symmetrical (not a single bevel) so can be used by those both left and right-handed. The smooth join between handle and bolster helps to prevent calluses from forming on the thumb and forefinger. For best care, wash by hand, and maintain and sharpen using whetstones. Avoid using glass, ceramic, or stone cutting boards as these will dull the cutting edge.

Very versatile knife with an amazing edge. It’s extremely durable, has a nice weight in my hand, and makes cooking in the kitchen something I look forward to doing more because of this knife alone.. Zsa1. Thu Sep 24 2026
