I love this pan. I use it for everything from pan searing chicken to roasting vegetables. After working in a five star restaurant this is the closest to restaurant quality cookware that I have found. The only drawback is that it heats so quickly I had to adjust my home cooking to prevent burning. This pan is perfect for braising and roasting. The only negative is that the pan is so large a hotspot is created. This is common for large pans steel spreads the heat fairly well. The lid is a nice touch that is a must have to make braises."..."Read more
