Like cast iron, but better. the best-selling Carbon Steel Frying Pan, seasoned with a mixture of shea nut oil and coconut oil, we’ve taken care of the first two seasonings (the hardest ones) so you can experience the difference Carbon Steel makes on day one. the Carbon Steel combines the heat retention of cast iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for the grill or open flame. With sloping walls and a wide surface, this pan provides maximum heat contact for high-heat searing. See how this chef-loved pan will replace cast iron as the favorite kitchen heirloom.

This pan is amazing. I'm not great at cooking with stainless steel but I can tell it's definitely easier release than other's I've tried with. It's feels heavy and durable in hand, and I had an existing lid that fits this universal 9.5in diameter, so it's not a big deal that it doesn't come with it's own lid. (My Demeyere Sautese lid fits it perfectly too). I've made lots of sauces with this--I wanted something that could stand up against a metal whisk without worrying about scraping off any coating.. I had looked at a similar product elsewhere and the reviews were terrible. I bought these under duress, we were part of the kettle recall, and I wanted to spend the gift card before i lost it. We use cast iron and i avoid non stick. I have not bought a zwilling product that hasnt been impressive. Highly recommend these! Easy to use and easy to clean. Care and use instructions: Cooking with your cast iron: Heat slowly – Cast Iron retains heat very well, but will absorb heat slowly. Give the pan several minutes to come up to temp. Use pot holders or oven mitts when handling hot cast iron. Cleaning your cast iron: Rinse your pan under warm water and gently scrape off any food remnants with a nonmetal brush or a nylon scouring pad. Thoroughly dry your cast iron and then using a paper towel, apply a light layer of oil around the entire surface of the pan. The pan should be smooth with no oil residue. Place the oiled pan on a burner set to high heat. Once the oil is lightly smoking, turn off the heat and allow the pan to cool.

Ideal for paella since it conducts heat quickly and evenly. The pan is thin but quite rigid and durable. If the pan does rust, a few passes with steel wool takes it right off.
