I love my new German stainless steel knives! All my knives are dull and though I have tried to sharpen them, my results have not been great. These knives, however, are gloriously sharp! Last weekend, I needed to slice vegetables and finely chop cilantro. I am so used to working with a dull knife that I used too much effort to cur odd the top of a bell pepper. The knife moved like lightening, and I almost cut my thumb off! It was so sharp that the slice did not even hurt. So, please be careful using your knives. Do not do what I did! My photos are not too gory and they are my cautionary tale. I have used both knives for vegetables and tofu. Dinner prep goes much faster now that I no longer chop my fingers or thumb!
