I used this knife to prepare dinner the day I bought it. It's replacing a 30+ year old Zwilling Santoku of the same size that has only one handle rivet left. I'm impressed with the balance of the new knife and feel of the handle, but I think I'll be learning how to chop with it, just for safety's sake, as my older knife is lighter. Its sharpness is perfect because of course, it's new. I was able to cut plum tomatoes, which can be a bit squishy, perfectly into small pieces. My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would.
