I ended up having to purchase this set elsewhere due to the delay in initial stated delivery but wanted to share my review of this cookware set. We have an induction stove top. We’ve been using for 2 weeks now. It is amazing build quality. They are hefty as they should be -less chance of warping. The non stick ceramic lends to not having to use ANY oils/butter -unless called for in the recipe itself. The clean up is FLAWLESS. I bought this pan for my mother. She can't handle the weight of cast iron, and her steel pans perform poorly. I read reviews of several carbon steel pans, and the OXO 10" was the obvious choice. It weighs only 2.6 pounds, and gets high marks for its sloped sides, large cooking surface, non-stick performance, and cool, comfortable handle. More multi-purpose than they tell you! I use the pan all the time for roasting potatoes, tater tots and root veggies. Because of the high sides it has a higher roasting temp than a sheet pan, and so everythign roasts faster and crispier in the pan. As for chickens or other roasts, its nice and big and the handles make it easy to maneuver, and lift the roast from the pan without "roast breakage". Far better than aluminum, but I did notice the seal does fade and it can show exterior rust if you don't rub it with oil just before baking again to reseal. Well when they finally arrived I was very surprised by their sturdy design and the weight. They are not too heavy to move around but they have enough weight to keep them from toppling over when stacking them in the cabinets. We have never had a set like this so we are still a bit worried about burning things in them, but from what I’ve read they are going to be much easier for me to clean without worrying about scratching off any nonstick coatings that could eventually give us all cancer.
