We've only owned these pans for 48 hrs yet we've used them several times. We cook on gas and have done filets with fantastic searing results, eggs that cooked very nicely/evenly with no sticking and vegetables which browned along the edges and did not burn. First thing, we are big Henckels fans. We bought this pan and it is a work of art; a thing of beauty. Pictures don't do it justice. It is well engineered. I have been searching for many years and couldn't have been happier to find these pans...they're like a unicorn. Actually non-stick (like you need zero oil to fry an egg) and actually dishwasher safe (we are an anti-handwash family). Have had this set for 1 year, near daily use, and still delighted by it. The non-stick isn't a coating, so no need to worry about it disintegrating over time. Tragically, we are remodeling our kitchen and these will not work with our new induction cooktop. I desperately wish Henckels made a version of this that I could get for the new kitchen, but I'm not seeing it out there. I have passed them on to my mom and sister, they're delighted to get them. I'm having trouble giving this pan an actual review, because i haven't gotten a chance to use it for it's intended use. Right after I got it, the lid shattered (no fault of Henckels), and the company does not offer a replacement lid. I love the concept of the pan... I just can't use it until I find a comparable lid..
