For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 12-Inch Wok is the perfect pan. Featuring a 12’’ size for added versatility, this wok is made of carbon steel, an alloy that is a combination of iron and carbon. The “Blue” in “Blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Stay-cool cast iron handles securely attach to the pans with heavy duty rivets for confidence in construction and a lifetime of use. Though cast iron also excels as maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier. With blue carbon steel, you’ll have a pan that is noticeably lighter without sacrificing performance. And like cast iron, blue carbon steel also heats quickly and evenly, reducing the risk of hot spots from occurring. Blue carbon steel is also prized for achieving high temperatures quickly without fear of damage occurring to the pan itself. Viking Blue Steel is oven safe to 450°F for restaurant quality finishing in the oven. Like cast iron, your blue carbon steel pan will need to be seasoned regularly to maintain its nonstick properties. “Seasoning” refers to the process of coating the base of the pan with a thin layer of oil that imparts a flavorful taste to your foods while also protecting foods from sticking. There are plenty of methods to seasoning your pan, but if this is your first time seasoning the pan, we recommend using very hot water and dish soap to first scrub the pan, then wipe dry and place it on the burner at low heat to finish drying. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe with paper towels and your pan is ready for use! For future maintenance, simply rinse the pan with water after use and scrub gently with a soft-bristled brush or sponge if necessary (No need for soap!). Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduction the natural nonstick and making the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal. Just clean the rust off with a scrubby sponge and season the area with vegetable oil. - Includes 10-inch & 12-inch Fry Pan Set - Pre-seasoned carbon steel construction for healthy, lightweight and long-lasting cookware - Features a matte finish and cut rims - Stainless Steel Handles - Safe up to 600°F/315°C - Compatible with all Cooking Surfaces; Electric, Gas, Grill, Induction, & Oven Friendly - Hand wash Only - Limited Lifetime Warranty - Blue carbon steel is lighter and more maneuverable than cast iron, making it easier for those who struggle with the weight of cast iron - The special alloy that makes up blue carbon steel is designed to resist rust and corrosion more effectively than cast iron, reducing the amount of time and energy spent on care and maintenance - Carbon steel cookware is touted by many as the perfect blend between clad cookware and cast iron, delivering the superior heat transfer of cast iron for searing and the even distribution of clad 3-ply cookware - Naturally nonstick due to the vegetable oil seasoning - As a thinner alloy, blue carbon steel heats more quickly than cast iron while still maintaining its even and consistent heat distribution - Blue carbon steel is able to withstand high temperatures without damaging the pan, making it perfect for finishing steaks with a quick sear or sautéing a quick stir fry This product contains: Iron, Chromium, Nickel, and Manganese For more information about chemicals in this product, visit www.vikingculinaryproducts.com/pages/disclosures.html Para obtener más información sobre los productos químicos de este producto, visite www.vikingculinaryproducts.com/pages/disclosures.html

Weeknight dinners have never been easier with KitchenAid® nitro-carbon steel, the ultimate kitchen workhorse. This do-it-all cookware offers the exceptional searing and timeless performance of cast iron, but with lightweight, anti-rust convenience, making it the perfect go-to pan to elevate weeknight meals. Made with innovative nitro heat technology to seal the surface of the pan and lock out moisture, this durable skillet is rust-resistant and 22 percent harder than traditional carbon steel as well as completely metal-utensil safe. Similar to cast iron, carbon steel can also be seasoned to develop a nonstick-like cooking surface over time. Heat safe to 750 degrees F and induction suitable, this pan offers culinary perfection from stove to oven to grill.

[This review was collected as part of a promotion.] This pan is great and very similar to a cast iron pan. What I love is that it’s made out of Nitro Carbon Steel so this pan does not rust. Cast iron rusts and it freaks me out that you still cook with a pan that rusted. So this is my new favorite. I live in a small space so not a lot of extra storage, so having things that serve multiple purposes are what work best for me . This pan not only cooks on a stove top, but also can be put in the oven and on the grill. You also can season your pan just like you would with a traditional cast iron pan. Since receiving this pan I’ve already gotten rid of a bunch of other type pans and oven stuff, which has freed up space and no longer need. A definite must in your kitchen.. Anonymous. Sturdy pan feels like stainless steel, non-sticky like a teflon one. Long handle makes it super easy to maneuver or flip. The ceramic coating stop below the lip so my all-clad lid with thin rim won’t scratch the coating, and this is a cool design. I know ceramic coating will not stay for a few years but still I feel this is a good purchase. I do like high power searing and this really ease me not to worry toxic fumes, and the smell of searing onions is spot on, no burning smell from a carbon steel or stainless steel pan, and no chemical smell from an aluminum/teflon pan.. First thing, we are big Henckels fans. We bought this pan and it is a work of art; a thing of beauty. Pictures don't do it justice. It is well engineered. My Wife has cooked vegetables in it a few times and raves about it. It cleans up perfectly. We like that there are no harsh chemicals in the mix. We always use plastic utensils. We can't say enough good things about it. Our recommendation is to buy it.. Ken. Knoxville, Tn.. Tue Dec 23 2025

This purchase was my first experience with ceramic coated pans. I'd only used standard nonstick until now. After extensive searching online I went with Nordic Ware because I know they make quality products, and since the company has been around for a long time I knew if I had any issues with my pans in the future that I could get help, unlike a new trendy brand that might not stay in business. I also appreciate that they're just one state over from me. (Which resulted in my order arriving just a day after I'd placed it!) It's been about a month and my pans are great. I use them several times a week, mainly for simple things like eggs and pancakes. I only use silicone or plastic cooking utensils with them, and clean up is very easy with just a soft sponge and dishsoap. Certain foods, like eggs, still need some butter or other fat to truly slide out (same as my old nonstick pans) but clean up really is effortless. The pans have a good weight to them and are very substantial. Not flimsy feeling at all. The only thing I'd nitpick about with the style of pans I got are with the edges on the metal portion of the handles. They're not necessarily "sharp" but I do wish they were a bit more rounded off for comfort. All in all though so far I'd say these seem like a great product at a very good price.. Anonymous.
