My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

Helps maintain your soras. The Sora 9" Honing Steel is used to hone your knives that are to gently realign the cutting edge of your Shun cutlery. As you use your knife, the razor-sharp edge naturally bends over just a tiny bit as the edge contacts the cutting board. Eventually, this means the sharp edge is no longer making direct contact with the food. The knife feels dull. The Shun combination honing steel is the solution. It gently realigns the edge of your blade, bringing the “sharp” back. It offers two honing surfaces: a smooth one for weekly honing and a micro-ribbed one for monthly honing—depending on your usage, of course. A built-in angle guide makes it easy to hone your Shuns with ease and precision. The steel-gray handle looks beautiful with the rest of your knives.

We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip.
