Unbelievable quality, love the beautiful soft pink/lavender color of Shallot, and while I haven't cooked with this product (I've used many other le Creuset items, and I know the quality's there), I can see this dish being used for au gratin potatoes, pork chops, pork loin, roasted vegetables, cobbler, and I'm sure dishes I haven't thought of.
