This pain is as close as it gets to perfection! It heats evenly, is scratch-resistant (no plastic or silicone tools required) and is as close to non-stick as any other pan I've tried and I've tried several! It's so much less finicky than my stainless steel or carbon steel pans. Worth every single penny and I'd buy it again in a heartbeat. The size is perfect for things like browning taco meat or large batches of sauce. The high sides mean that my stove top stays clean because nothing is splashing over the edges. these pans are absolutely perfect. the quality seems to be very high, they are sturdy and the coating seems safe. they do come unassembled and you have to screw on the handles, but it comes with probably the best screwdriver i have ever had for it. i am very happy with these and can cook pancakes, grilled cheese, etc with no issues of burning or sticking, and cleaning them after is very easy. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 12-Inch Wok is the perfect pan. Featuring a 12’’ size for added versatility, this wok is made of carbon steel, an alloy that is a combination of iron and carbon. The “Blue” in “Blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Stay-cool cast iron handles securely attach to the pans with heavy duty rivets for confidence in construction and a lifetime of use. Though cast iron also excels as maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier.
