I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). I really like the placement of the burners and the additional griddle and wok ring. What I want to do now is get a replacement tri-ring burner. The brass rings are just not easy to clean, but if that is the worst thing I could say about this cooktop, then you did an outstanding job! Thank you so very much.
