The Global Knives 8.7 in. Honing Steel features a combination of industrial strength ceramic creating one of the best preventative maintenance tools possible for the edge of your knife. Ceramic is extremely hard with a slight abrasive characteristic so it sharpens as it aligns the edge.

This knife is a double-beveled "deba" knife (Japanese fish knife), the wide blade is great for cutting meat and fish.

Finally broke down and spent the money on great knife. For anybody who doesn't think it's worth it, it is! This knife was exactly what I wanted, and I know its extra sharp because its new, but the quality steel will hold that edge much longer, and the wide blade is a definite plus over a standard blade when chopping and scooping up stuff to toss in a pan.
