I never thought professional cookware makes a big difference. The conduction of heat surrounding the whole pan. If you accidentally cook to fast, just take it off heat and put the cover on, the stuck on refried beans started to loosen. You only need medium-low temps with this pan. Worth every penny!. Amy.
