I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). While this is one of my favorite pans, it is NOT non-stick as promoted. Everything sticks if you dont use oil, butter, or spray. I have NEVER washed it in the dishwasher, so that aint it.
