This is a solid pan, very durable. Great weight to it but thin for the materials. I have been slowly collecting better quality pans and this is line with the other brands I use. I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). Bought these pans after doing some research. Even though the reviews were really good, I kept my expectations minimal. They actually far exceeded expectations with their quality. I got them to replace some Rachael Ray ones that I've had for a few years at our Airbnb. Pans get a lot of abuse! Hopefully these will stand up to people using forks and other metal in them.
