Have used to grill steaks, fireman’s chicken twice and some other things. I have had no problem keeping the charcoal hot. Just keep the two vents open or take the lid off for a few minutes and you will have a hot grill. I take the time to thoroughly clean everything, inside, outside, grates using hot soapy water and Dawn dish soap. It removes the grease and cleans up everything great.
