While I did not buy this particular set, I do own all the pieces, from my original, nearly 25 year old D3 3-Qt Saute, saucepan, and 10" skillet, to my most recent additions of the non-stick pans. This is a near perfect set, easily covering 90+% of any stovetop needs. If I could add just one piece, it would be the 2-Qt round-bottom saucier. It is invaluable for cooking risottos and custard for ice cream base, or any other sauce where the round bottom minimizes hot-spots and scorching that forms in the corners of other saucepans. It uses the same lid as the 3-Qt saucepan
The choice of the HA-1 non-stick pans is a nod to the fact that all non-stick pans have a limited lifespan and need replacing every 3-5 years. While D3 non-stick pans are available, they also have the same limited lifespan that makes their higher price difficult for most to justify. The pan will last forever, the nonstick coating will not.
In buying this set, you are laying the foundation for a life-long kitchen. This is important, not just for sentimental reasons, as a home cook it gives you the opportunity to really learn how to use your pans. When I grab my sauté pan, whether making "Côtelette de Porc aux Pommes et Oignons" scented with allspice, and deglazed with Calvados. or pan-searing scallops with rosemary and shallots, I am confident of what to expect and how to best utilize my pans.
