• This 7" Nakiri (vegetable knife) utilizes a double beveled blade crafted from 9cr18mov carbon steel. With a rockwell hardness of 60, this blade will serve as a workhorse by keeping its edge longer and sharper.
• Each knife uses a traditional Japanese octagonal shaped tortoise shell resin handle. This handle is water proof and will not crack or expand over time.
