It is designed for easy, confident pressure canning—the only method recommended safe by the U.S. Department of Agriculture for canning vegetables, meats, poultry, and seafood. It doubles as a boiling water canner for preserving fruits, jams, jellies, pickles, and salsa in half-pint, pint, and quart jars. The canner is constructed of heavy-gauge aluminum with an induction-compatible stainless steel-clad base for fast, even heating. It works on gas, electric, smooth-top, and induction ranges. The deluxe pressure gauge registers precise processing pressures, which are especially important in high-altitude areas. The special air vent/cover lock allows pressure to build only when the cover is closed properly and prevents the cover from being opened until pressure is safely reduced. It also gives a visual indication of pressure inside the canner. Canner is versatile too! Use it as a large-capacity pressure cooker for preparing meats, poultry, soups, desserts, and more. Includes a cooking/canning rack and an 80-page easy-to-follow instruction/recipe book for canning and pressure cooking.
