I have used a tortilla press for years ,this s the first time I heard it called a griddle. The company itself needs to call it what it is. A Tortilla Press. It has a descend weight to it. It is so light I can pick it up with one hand. My other cast iron and enamel cast iron pans are too heavy to handle that easily. The surface is smooth like stainless, but it has the even cooking temps that cast iron is know for. I notice that it does heat up faster that standard cast iron (maybe since it is lighter weight) so you need to adjust the heat down and it does not take as long to get to smoke point.
