This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol. There is no safer and better way to cook than a set of pans like these. You never have to worry about getting cancer with these. I have bought the most expensive, highly rated no stick pans and after a few years use, they ALL started to peal and scratch, even using the proper tools. These pans I treat like my cast iron pans of over 30 yrs. old. The first time I used them, I cleaned like my cast iron. It took about 8 uses but after that, the eggs slip right out. I never use soap on them, just a stainless steel scrubber with some salt and oil and than put a light coat of oil on them before I put away. If there is burnt on food, I put some water in them and let them sit while I eat and all I need to get the cooked on food off, is my stainless steel scrubber and they clean just as well as any non stick.
