The Shun Kanso 5.5-inch Hollow Ground Santoku Knife is a multipurpose knife used for just about every cutting job in the kitchen. Slightly shorter than the standard chef's knife, this Japanese steel knife is easy to maneuver and works well as a fruit, protein and vegetable knife. Hollow ground indentations reduce friction while cutting, making it easier to glide through food. Made with AUS10A high-carbon stainless steel reinforced with vanadium and an angled, tagayasan wood handle, this all purpose knife is strong, durable and precise. The butt of the knife is designed to function as a bottle opener and allows for easy hanging on knife hooks. Supported by free sharpening and honing. Handcrafted in Japan, the Shun Kanso Santoku Knife adds essential simplicity to any cooking knife collection.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

This is a beautifully crafted knife. The blade is beautiful and made with the devotion that Japanese craftsmen are famous for. The wooden handle is a lovely dark brown and fits nicely in my hand. This is more than a kitchen knife, it is a piece of art and deserves special care. No dishwasher, dry immediately after use and store such that it won't nick you or be nicked by other cutlery.. The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

The Shun kanso BBQ set features the three key knives you'll need to handle grill worthy proteins of all types all in a handsome shun knife roll, perfect for when you take your BBQ show on the road. This gorgeous set includes the shun kanso honesuki, a Japanese style poultry knife, the Shun kanso boning fillet knife and the Shun kanso brisket knife, ideal for trimming and slicing larger cuts of meat, including brisket, ham, roasts and turkey. Brisket knife includes its own wooden saya, or sheath. Kanso is a design principle based on zen philosophy. It means “simplicity,” but simplicity that is achieved by eliminating the non essential. In kanso, QKA/Shun took away anything that doesn’t matter and kept everything that does: high performance steel, razor sharp edge, perfect balance and precision cutting control. The steel is Japanese aus10 a highly refined, high carbon, vanadium stainless steel that takes a razor sharp edge and holds it longer. Kanso's heritage finish hides scratches and gives kanso a rustic look that just improves with age. The handle is made of a wood called tagayasan or wenge, which is sometimes known in Japan as “iron sword wood.” the handle contouring enables an easy chef's grip. Full tang construction provides strength, balance and easy cutting control. Like all Shun knives, kanso is sharpened to a 16° cutting angle each side to cut cleanly and help preserve food’s freshness and best taste.
