This is my second Wilton Armetale (the first was the chili pot). I love that it does not break, chip, rust and is safe for cooking up to 1000 degrees F (cook in oven, stove top or grill). This pan is exceptionally good and heats up quickly and evenly, I confirmed it with the thermometer with a flat surface probe. I cooked a fried egg in butter and it did not stick. I made a quick fried rice in it and it did not stick. Cleaning is exceptionally easy. Just water and some dish soap and a sponge. No traces of tarnish in sight. It's simply an excellent pan. I had a few pieces of Wilton Armetale purchased before, but never a frying pan and I am very pleased. It does have one limitation that I must disclose. It spins on our flat ceramic stovetop when heated. When it cools down, it becomes flat again. Since I got it primarily for the stovetop cooking, not for oven, nor for grilling, I hammered its bottom lightly on the outside, in the middle, with a wooden hammer, to change its curvature a fraction of a degree. Nothing is visible on its cooking surface. The water sits flat right in the middle, no pooling in the edges. But now it sits flat both when it is cold and when it is heated to any temperature, well beyond 250C or even 300C when water rolls over its surface like a giant mercury ball. You can cook or fry with any oil in it, including extra virgin olive oil, of course. And cooking sprays will not harm it either. Only when using it on the grill, one should be more careful with the choice of oils or sprays, because they can catch flames. I am in love with this pan and cannot recommend it highly enough. I just received this a few days ago and have used it on the grill to make pork tenderloin and hamburgers. They were delicious and the griddle worked perfectly. I did use marinate with molasses ingredient which was hard to get off griddle but with extra effort it did come off. I will get a lot of use out of this griddle. I have been using glass loaf pans for several years and thought that I might improve the texture of my bread with a metal pan, plus I wanted to stop using baking spray. This is the classic size of my 40+ year old glass pans, so I don't have to adjust my recipe. I used a parchment paper sling and was really worried when I started to lift the loaf out, but it came out so clean that you can't see that it has been used. I think that it might work without the paper sling even, just tip it out. I would buy this in the diamond like carbon coating, just for durability, but this looks like it is going to work just fine as is. Very glad that I ordered it.. Oldguyinoh. Ohio, USA. This roaster allows you to completely cook ribs in under an hour. It has an internal roasting rack that elevate ribs off the bottom of the roaster allowing them to steam in their own juices or other flavored liquids.
