This pan is amazing. I'm not great at cooking with stainless steel but I can tell it's definitely easier release than other's I've tried with. It's feels heavy and durable in hand, and I had an existing lid that fits this universal 9.5in diameter, so it's not a big deal that it doesn't come with it's own lid. (My Demeyere Sautese lid fits it perfectly too). I've made lots of sauces with this--I wanted something that could stand up against a metal whisk without worrying about scraping off any coating..
