I have a lot of high- end knives and was debating on pulling the trigger on a Yani since I'm not a sushi chef or a pro but I've been mesmerized by this knife for a couple years. I'm so happy I got it, it's a work of art! I've used it to fillet a few fish I've caught and for slicing roasts and steaks, haven't noticed it " steering" me due to single bevel, it's so sharp and has perfect weight. Not a laser like a Yu so I've got more confidence if I'm cutting a rib roast or something with a bone-in. Beautiful work of functional art. Haven't had to sharpen yet but will definately do it myself, I'm confident in my ability to sharpen and not scratch it. It is one fine tool. BTW, it's not my most expensive knife. Great knife set! Really happy with the purchase. We are trying very hard not to put them in the dishwasher but occasionally one gets by us and our kids do it, however the knives have held up! What a nice looking set! I’ve been looking for a new set of kitchen knives for some time now and came across these. I had planned to surprise my husband with them for Christmas but once I received them I knew I couldn’t wait that long! It comes with almost any knife needed and let me say they are super sharp! So much in fact my husband gave himself a little cut when putting them all in place. The overall holder is a little larger than I would have wanted as it takes up just a little more counter space than our old one, but not a deal breaker. I only took a photo of a few knives vs laying them all out, but you can still see the sharpness and quality. They are not lightweight but not heavy, just right!
