Once upon I time I could sharpen my knifes to razor sharpness by hand. Decades later my hands are no longer steady enough to do that. I spent 10 minutes reading the instructions and then ten minutes getting two 8" knives sharper than I could do it by hand. After using it a few more times I'll be able to get a knife sharp in under a minute. Seriously, I think I'll be able to sharpen a knife as fast as a professional chef does with one of their sharpening rods. I was well overdue for a new immersion blender, and did a good bit of research before deciding on this one. The attachments on this model are terrific. The only one I have not yet used is the masher (solid black piece), but maybe this fall when we make more mashed potatoes. The blender has a safety lock design that my previous did not. The "click" mechanism for releasing/swapping attachments makes using it a breeze. I especially like that it has three speeds for blending: pulse (which pulses though you hold the button steady), low and high. This makes it very versatile for my various uses. After reading the instructions, I was able to sharpen all my knives as sharp if not sharper than when they were new (if that’s possible) in maybe 30 -45 minutes. In the first stage of sharpening, use the white coarse wheel to sharpen dull and chipped edges. In the second stage, use the pink fine wheel for standard sharpening and polishing the blade edges. Safe and easy-to-use knife sharpener for any kitchen.

Even the best knife will lose its initial sharpness during the course of time. Using sharpening steel each time you use your knives will keep the edge aligned, resulting in a sharper, safer knife.

For most home chefs the sharpening steel will realign the edge and remove any niche or burr. An oval rod provides more surface contact with the edge to achieve the same results as a traditional rod but with fewer strokes.
