This knife is an absolute BEAST in the kitchen!!! As someone that is in a kitchen every day of their life and loves it immeasurably, I can confidently say that there is NOTHING this knife cannot handle. From slicing 2 entire pork tenderloin in under 20 min, to daily chopping/dicing/mincing this thing does it all and comes out on the other side looking absolutely beautiful. The santoku is primarily designed for cutting fish, vegetables, and boneless or lightly-boned meats such as chicken. The santoku features a sheepsfoot blade with a spine that drops sharply to meet the hardened, acutely-ground cutting edge. The hollow edge feature helps reduce friction while cutting, allowing food to fall away easily.

Miyabi 5000 FCD Shotoh, 13cm blade. The photos, or petty knife, is ideal for the preparation of smaller cuts of meat and fruit, and vegetables. It has a fine carbide steel core with a hardness that gives very good cutting edge retention and initial sharpness. The core is embedded in 48 layers of steel which gives each blade its unique Damascus-design pattern. Razor-like sharpness is achieved by a three-stage grinding, sharpening, and polishing process called Honbazuke honing. The entire length of the cutting edge can be used as there is no finger guard. For best care, wash by hand, and maintain and sharpen using whetstones. We’d recommend using a wooden chopping board as opposed to glass, ceramic, or stone boards as these will dull the cutting edge.
