While this is one of my favorite pans, it is NOT non-stick as promoted. Everything sticks if you dont use oil, butter, or spray. I have NEVER washed it in the dishwasher, so that aint it. I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). It’s too soon to comment on the durability of this product, but so far I am pleased with the nonstick capability and the overall heft and performance of the pan. Years ago, I bought a small nonstick ceramic saucepan that has a great interior coating, and it still works as well as the day I bought it in terms of the nonstick surface. I finally decided to buy a frying pan, even though I normally use cast-iron or my instant pot or Stainless steel in an effort to avoid toxic chemicals leading into my food, including the ones that have yet to be discovered as toxic. Hopefully this is as non-toxic as advertised in the long run, and it’s amazing to not have to use any kind of oil and be able to cook so easily in it. I did a ridiculous amount of research before buying these GreenPan GP5 pans, and I’m happy to say they were worth it. Eggs slide around like they’re on ice, food cooks evenly on my gas stove, and cleanup takes about 10 seconds. The real test? Someone in my house used a fork instead of a spatula and the pan survived without a meltdown.
