I did a ridiculous amount of research before buying these GreenPan GP5 pans, and I’m happy to say they were worth it. Eggs slide around like they’re on ice, food cooks evenly on my gas stove, and cleanup takes about 10 seconds. The real test? Someone in my house used a fork instead of a spatula and the pan survived without a meltdown. The non stick ceramic lends to not having to use ANY oils/butter -unless called for in the recipe itself. The clean up is FLAWLESS. I have many types of pans as I am a very accomplished home cook. I appreciate good quality as well. I own All-Clad, Calphalon, Le Creusets and Staub etc. . I wanted a non stick skillet and read about the "GreenPan" . This model Valencia is a higher quality and price point but I like the durability of it. I was hoping to purchase the same model in a slightly larger size , but I can't seem to find it , so maybe Green Pan doesn't make it.. The pan is sturdy and the non-stick surface looks like it will last a while. I have used it to saute, fry and cook rice. I was surprisingly impressed by this aluminum skillet with lid. I’ve never used this type of stoneware before and I’m surprised at how little it scratches. Even when the teenage help I hired used steel wool on it.  and how well the nonstick sticks up even after that I can’t see a scratch. I cook eggs regularly and they slide right out of the pan.
