They are attached to the range hood blower to clean the air before recirculating back into the house. Ductwork is not necessary. For most home chefs the sharpening steel will realign the edge and remove any niche or burr. An oval rod provides more surface contact with the edge to achieve the same results as a traditional rod but with fewer strokes.

I honestly only purchased this knife because I wanted to see what the "extra wide" actually ment; as it is also offered in the chefs blade. It is slightly heavier than my other pairing knife (which i do prefer). By 'wide,' this refers more to the depth of the blade, versus if the blade makes a 'wider' cut. I'll try to post a photo of one of my regular pairing knives next to the extra wide one to help explain!
