Once upon I time I could sharpen my knifes to razor sharpness by hand. Decades later my hands are no longer steady enough to do that. I spent 10 minutes reading the instructions and then ten minutes getting two 8" knives sharper than I could do it by hand. After using it a few more times I'll be able to get a knife sharp in under a minute. Seriously, I think I'll be able to sharpen a knife as fast as a professional chef does with one of their sharpening rods. For most home chefs the sharpening steel will realign the edge and remove any niche or burr. An oval rod provides more surface contact with the edge to achieve the same results as a traditional rod but with fewer strokes.
