Absolutely love this knife! I have had the knife for more than 2 years now, and it still works just as great as the first day I used it. You do have to make sure to sharpen the knife periodically (I suggest you buy the sharpener that is made for this knife, which I did). I have absolutely no complaints about this product. Miyabi 5000 FCD Shotoh, 13cm blade. The photos, or petty knife, is ideal for the preparation of smaller cuts of meat and fruit, and vegetables. It has a fine carbide steel core with a hardness that gives very good cutting edge retention and initial sharpness. The core is embedded in 48 layers of steel which gives each blade its unique Damascus-design pattern. Razor-like sharpness is achieved by a three-stage grinding, sharpening, and polishing process called Honbazuke honing. The entire length of the cutting edge can be used as there is no finger guard. For best care, wash by hand, and maintain and sharpen using whetstones. We’d recommend using a wooden chopping board as opposed to glass, ceramic, or stone boards as these will dull the cutting edge.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. A mixed-fiber flatweave rug with a subtle checkered pattern. The Reveal Collection is inspired by overlapping layers of paint: the moment when you remove the top coat and uncover another hue you never knew was there. To translate this into a weave, we used contrasting colors, focusing on the interaction of warp and weft. Named for Zion's sedimentary rock layers, Kaibab has a kind of abrash effect, which on closer inspection is actually a micro-check pattern created by the movement of the warp and weft.
