Each board is kiln-dried, with rustic edges and slight variances. You can even count the age rings. Some of their boards will have more grain than others; some will have knotholes and discolorations. I love the quality and look of my new Boos butcher block island. My only complaint is that I wished the drawers were two inches longer so they lined up with the block and therefor provide additional space. The item is made of all-natural American Black Walnut wood. Walnut sapwood is white and John Boos uses all of the wood. It's a tone color of the wood and the tone of the wood varies within the tree itself. Variations in the final product are not defects and therefore not covered under our warranty.
