A great modern update for my bedroom that I remodeled to replace the old early 2000s model I had. It’s much more quiet and glides through the air. I keep it set to 6 which is the highest speed. It’s was about 40 minutes to get it assembled and installed. The instruction video made things super easy, but the printed instructions were good too. My only issue is that it does not have memory. So if power gets switched off, it will not save your last setting (including blade direction) and you must use the remote to power it on. Miyabi 5000 FCD Shotoh, 13cm blade. The photos, or petty knife, is ideal for the preparation of smaller cuts of meat and fruit, and vegetables. It has a fine carbide steel core with a hardness that gives very good cutting edge retention and initial sharpness. The core is embedded in 48 layers of steel which gives each blade its unique Damascus-design pattern. Razor-like sharpness is achieved by a three-stage grinding, sharpening, and polishing process called Honbazuke honing. The entire length of the cutting edge can be used as there is no finger guard. For best care, wash by hand, and maintain and sharpen using whetstones. We’d recommend using a wooden chopping board as opposed to glass, ceramic, or stone boards as these will dull the cutting edge.

Absolutely love this knife! I have had the knife for more than 2 years now, and it still works just as great as the first day I used it. You do have to make sure to sharpen the knife periodically (I suggest you buy the sharpener that is made for this knife, which I did). I have absolutely no complaints about this product. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would.
