I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. The automatic louver vent opener was designed to automatically control the temperature and provide additional ventilation in all Canopia greenhouses. As the air inside the greenhouse warms, the vent gradually opens to allow the correct amount of air flow into the greenhouse and closes when the optimal temperature is reached. The vent arm was designed with the use of natural minerals that expand with heat to push a piston, which raises the window, as the air gets warmer then contracts as it cools, closing with the use of a spring. The automatic vent opener operates without the use of electricity.

Handles get hot. Treat the pans gently. They do cook nice as long as you cook on medium to low heat . They are basicly the Our Place Everypan that I was hoping to replace .
