These pans I treat like my cast iron pans of over 30 yrs. old. The first time I used them, I cleaned like my cast iron. It took about 8 uses but after that, the eggs slip right out. I never use soap on them, just a stainless steel scrubber with some salt and oil and than put a light coat of oil on them before I put away. If there is burnt on food, I put some water in them and let them sit while I eat and all I need to get the cooked on food off, is my stainless steel scrubber and they clean just as well as any non stick. I've looked for a sautee pan for a very long time. They're more common in Middle Eastern cooking and I just couldn't find the right stuff. While this braiser pan isn't officially a satuee pan, it does the work beautifully. The food comes out cooked evenly and I can use my metal utensils with no fear. Used the first time this AM - major non stick and if it holds up will be the best skillet ever.
