I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). It’s too soon to comment on the durability of this product, but so far I am pleased with the nonstick capability and the overall heft and performance of the pan. Years ago, I bought a small nonstick ceramic saucepan that has a great interior coating, and it still works as well as the day I bought it in terms of the nonstick surface. I finally decided to buy a frying pan, even though I normally use cast-iron or my instant pot or Stainless steel in an effort to avoid toxic chemicals leading into my food, including the ones that have yet to be discovered as toxic. Hopefully this is as non-toxic as advertised in the long run, and it’s amazing to not have to use any kind of oil and be able to cook so easily in it. Used the first time this AM - major non stick and if it holds up will be the best skillet ever. these pans are absolutely perfect. the quality seems to be very high, they are sturdy and the coating seems safe. they do come unassembled and you have to screw on the handles, but it comes with probably the best screwdriver i have ever had for it. i am very happy with these and can cook pancakes, grilled cheese, etc with no issues of burning or sticking, and cleaning them after is very easy.
