I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). these pans are absolutely perfect. the quality seems to be very high, they are sturdy and the coating seems safe. they do come unassembled and you have to screw on the handles, but it comes with probably the best screwdriver i have ever had for it. i am very happy with these and can cook pancakes, grilled cheese, etc with no issues of burning or sticking, and cleaning them after is very easy. I bought the 11". I have used BergHOFF exclusively for 12 years. The only difference is I previously bought the BergHOFF Eurocast, from a another retailer. I even contacted BergHOFF by email, asked them if the ferno-green (ceramic), was the same. BergHOFF Eurocast has a shiny finish on top of the inner pan coating. Berghoff assured me it was in fact the same. Time will tell, 4 of my frying pans are the only ones that wore out after 10 years. Been putting off buying new ones until I found them on Wayfair. After 12 years of use, my 12 1/2 inch WOK and 1 other 12 1/2 inch frying pan plus 2 others, still look brand new. One point I will make is I have Parrots, last 30 years, this is one of the only type pan if accidentally overheated will not kill them. Teflon type pans when new or overheated , the fumes will kill any Parrot/bird you have living in your home. Pretreat the pans with vegetable oil as instructed, and periodically do it over the months and many years you have them, they are well worth the money spent.. Anonymous. South Bend, IN.
