If there are fresh herbs that need to removed later in a recipe for instance, a little bag can be made for them out of the cheese cloth. The water or broth will still go through the bag. So I don't forget it, I tie the little bag to the lid of the pan. Speaking of broth, it can be used to make that too. It helps to get meat and veggies out.
