I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). Love this Pan! Attractive, nice weight and crisp bacon at med-low. Read the instructions on how to use it(preheat 2min.) And have cooked with no added oil. Made an omelette last night with out adding any oil or fat and it turned out great. Wish it had come with a lid is my only complaint.
