I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I wanted a non-stick griddle that would be good for eggs or pancakes. I know these types of teflon non-stick pans are being fazed out for ceramic non-stick. Beautiful Crucible knob is an easy way to elevate any piece. I have it here replacing a signature gold tone stainless steel knob on my deep teal Dutch oven. The knob feels substantial and makes it easier to grip the lid. I have attached photos comparing the before-after.
