The rectangular shape of this pan was inspired by the Japanese makiyakinabe pans that are used for rolled omelets called tamagoyaki. The Demeyere Belgian Steel Frying Pan is an excellent cooking utensil. The handle is long and stays cool so handling the pan is easy and safe. I do use coconut oil for frying eggs at middle stove temperatures with great results and a Silicon spatula to preserve the stainless steel surface. I purchased this pan to replace my dedicated nonstick pan for eggs. I seasoned it twice using the potato skin, oil and salt method. It performed beautifully the first time I cooked eggs in it.
