I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). This is excellent and nearly perfect for what I need it to do. Before you read on, you can just stop right here if you are not expecting to use it like a woke. Here's why this is now my workhorse in the kitchen. 1. in the new apartment, I no longer have a high powered gas stove, a traditional wok is not useless. This thing is almost as light as a hand hammered iron wok. 2. it's thin enough that heats up fast to stir fry 3. it does not retain heat nearly as much as my hexclad...which is key to woking.....heats up fast and cools down fast 4. it has more raised steel parts than hexclad, it provide better, faster heating, and frankly better flavor (yes, it will stick much more....but this is a wok, if you are sticking with a wok, you are probably not using it right) 5. it comes with a very nice lid with I use may be 20% of the time. This is my first set of stainless cookware. I ordered this cookware based on the price of the set and the adorable style. I am not really that fond of cooking, but this sweet set has made cooking much more enjoyable. I have had them about a month and have been using them regularly. They clean up beautifully. I took a photo of the inside of the pot that gets the most use. As you can see, it still looks almost brand new.
