Potato and Spinach Fritters

Make this delicious, easy, and healthy appetizer for your New Year's Eve party.

Holidays mean heavy and often not-so-healthy eating, this New Year's Eve, offer your guests a healthy alternative to traditional appetizers. These spinach, red pepper, and potato fritters are so delicious they won't even notice it's healthy.

These potato and spinach fritters are ideal for entertaining because they can be made ahead of time. You can freeze for at least 1-2 weeks prior to serving. Just bake them in the preheated oven for an extra 3 minutes on each side.


Making recipes ahead of time will help you be able to serve nutritious options and enjoy the party, rather than stressing out while spending the party pulling things out of the oven.


One thing to keep in mind is leave out the chili powder if you're planning to serve these fritters to kids at your party. You can use thyme and garlic powder instead.  


Potato and Spinach Fritters


Yields 12 large fritters, serves 4Total time 45 minutes


1 pound potatoes, mashed
2 cups packed baby spinach
1 small red bell pepper, diced
1 egg, beaten
1 teaspoon chili powder
1/2 teaspoon salt


Preheat your oven to 375 degrees F. Spread spinach on a baking sheet and bake for 3 minutes. Cool and squeeze out the liquid.


Transfer the spinach to a large mixing bowl and add the remainder of the ingredients. Combine the ingredients with your hands or a spatula. Form patties and place on a greasedbaking sheet.

Bake the patties for 24 minutes turning once after 12 minutes. Serve while they are still warm.
