Season it exactly as instructed, then used it right away. I made paella and it turned out pretty good. It will take a couple tries to get it perfect, but this is the right pan for the job. Heat stayed even. The handles also get hot so definitely need something over them when touching them. And of course its heavy, especially when loaded up so be prepared for that.. Elissa. Excellent sauté pan. My favorite of them all. I was a bit hesitant to buy such an expensive matfer. But we’ll worth the price. There is however a mistake in the information that is on the website.
